คณะอุตสาหกรรมเกษตร มหาวิทยาลัยสงขลานครินทร์ มุ่งเน้นในการผลิตบัณฑิต งานวิจัย และบริการวิชาการที่มีคุณภาพ เพื่อรองรับการพัฒนาประเทศที่จะต้องเปลี่ยนไปอย่างรวดเร็วในโลกยุคดิจิทัลที่ไร้พรมแดน ภายใต้วิสัยทัศน์ “อุตสาหกรรมเกษตรเพื่อการพัฒนาที่ยั่งยืน (Agro-Industry for Sustainable Development)” และ พันธกิจ ดังนี้
- พัฒนากำลังคนด้านวิทยาศาสตร์ เทคโนโลยี และนวัตกรรมอาหาร บรรจุภัณฑ์ ผลิตภัณฑ์ชีวภาพและการจัดการ ให้เกิดการเรียนรู้ตลอดชีวิต มีความเป็นผู้ประกอบการ เพื่อการพัฒนาที่ยั่งยืน
- สร้างองค์ความรู้และนวัตกรรมอาหาร บรรจุภัณฑ์ ผลิตภัณฑ์ชีวภาพและการจัดการเพื่อการพัฒนาที่ยั่งยืน
- ให้บริการวิชาการเพื่อตอบสนองความต้องการของชุมชนและอุตสาหกรรมทั้งในประเทศและต่างประเทศ เพื่อให้เกิดความยั่งยืน

The Food Science and Technology, and Agricultural Sciences of Prince of Songkla University are ranked 1st in the country by Academic Ranking of World Universities and U.S. News & World Report Best Global Universities retrieved on March 4, 2021.
